Bailey’s Irish Cream Brownies March 16, 2013

Happy almost Saint Patrick’s Day everyone! I was feeling like making a dessert last night and felt like it was close enough to Saint Patrick’s Day to make it an Irish dessert! These brownies turned out AMAZING warning: they are incredibly addictive! I got the original recipe here. Give them a try:

Ingredients:

  • Brownie Mix
  • 1/2 cup Bailey’s
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons milk
  • 2 tablespoons Bailey’s
  • 1 teaspoon brewed coffee
  • 1/2 cup butter, softened
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Directions:

  • Mix the brownies mix, 1/2 cup Bailey’s, vegetable oil, and 2 eggs. Bake them for the time and at the temperature suggested for the brownies
  • Mix the milk, 2 tablespoons Baileys, and brewed coffee in a small microwavable bowl. Microwave it roughly a minute, until it’s boiling. Let it cool to room temperature
  • Mix the butter and confectioners’ sugar and the butter. Next add the Bailey’s mixture and the vanilla extract.
  • Spread the frosting onto the brownies and enjoy!

Nutella Lava Cookies March 7, 2013

Recently there’s been a lot of snow here in Virginia. And I’ve gone a little stir crazy. Along with cleaning and watching a West Wing marathon I decided it was cookie making time! I found the recipe for these nutella lava cookies on pinterest and it was love at first sight. These were amazing right out of the oven! They were a little tiresome to make, the rolling got old quick but they were so worth it! Give them a try!

Ingredients:

  • 1 cup butter
  • 1¼ cup sugar
  • 2 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 2¼ cups all-purpose flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 1/2 cups large semi-sweet chocolate chips
  • nutella for filling

Directions:

  1. Preheat the oven to 350F.
  2. Line baking sheets with parchment paper or silicone baking mats.
  3. Cream the butter and sugar on medium-high speed until light and fluffy, about 2-3 minutes.
  4. Blend in the eggs one at a time, scraping down the bowl as needed.
  5. Mix in the cocoa powder at low speed until well blended.
  6. Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated. Stir in the chocolate chips.
  7. Scoop up about 2 tablespoons of dough and roll into a ball. Flatten the ball in the palm of your hand and put in about 1/2 tbsp of nutella in the middle of the dough. Then wrap the edges around to form a ball and to cover the nutella completely. Place on the prepared baking sheets, and repeat process, placing balls about 2 inches apart. Bake about 13-16 minutes, until cookies are cooked and slide easily off of parchment paper. Serve while warm.

Baked Parmesan Tilapia

One of my favorite things about having fish for dinner is how quickly it thaws when it’s frozen. It is my go to whenever I’m running late, starving, and forgot to plan ahead. Normally I just throw some marinade on it, I found this recipe a few weeks ago and loved it! The original recipe called for thyme but I didn’t have any so I just used basil and oregano and it worked out fine!  Give it a try and tell us what you think:

Baked Parmesan Tilapia:

Ingredients:

  • 1 tilapia fillets
  • 1 Tbspbutter (room temperature)
  • 1/4 clove mincedgarlic
  • 1/8 tsp basil
  • 1/8 tsp oregano
  • 1/8 cupParmesan cheese; grated

Directions:

  1. Preheat oven to 400ºF.
  2. Put on a baking sheet (spray the non-stick spray first) and bake for 10-12 minutes (it doesn’t have anything on it right now, add salt and pepper if you want but I didn’t and it turned out fine)
  3. Mix the butter, garlic, basil, oregano and parmesan cheese together.
  4. Once the fish is done (my mom says fish is done when it’s flaky, so that’s the standard I use), spread the mixture over it and let it sit in the oven for another 3 minutes.

Salsa Chicken

This chicken recipe is a fun fiesta recipe! Alright I’ll stop the terrible puns now, but seriously though this chicken recipe is awesome. It was so full of flavor! This is my moms recipe so give it a shot with a side of rice or nachos!

Ingredients:
– 1/4 pack of taco seasoning mix
-Salsa
-Shredded cheese (any blend)
1 chicken breast

Directions:
-sprinkle the taco seasoning mix ontonthe chicken
-brown the chicken in a skillet for about 3 minutes on each side, this locks in the taco flavor.
-put the chicken in a pan and pour salsa over top
-place in oven and cook at 375 for about 30 minutes or unil the chicken is done.
-sprinkle cheese on top and put back in the oven for 3 minutes.

And you’re done! Enjoy!

Cheddar Chicken February 20, 2013

This recipe is so delicious! It tastes great and is so easy to make! My one issue was the bottom was a little soggy, if you have a rack to put the chicken on and than put into a pan I’d recommend that, however soggy bottom or not, this chicken tasted great!Here’s the recipe:

4 buttery crackers (such as Ritz), crushed
2 ounces grated Cheddar cheese
1/4 clove garlic, (I bought a small container of chopped garlic awhile ago and it’s served me well for things like this)
kosher salt and black pepper, to taste
1 boneless, skinless chicken breasts
1 tablespoons unsalted butter, melted

Heat oven to 350° F. In a bowl, combine the crackers, cheese, garlic, and ¼ teaspoon each salt and pepper.

Dip the chicken in the butter, then in the cracker mixture, pressing gently to help the crackers adhere. When I did this very little stayed on, so I just patted a majority of the mixture onto the chicken when I put it on the baking sheet.

Bake until the chicken is golden brown, 25 to 30 minutes.

Apple Cinnamon Muffins February 14, 2013

I don’t know about you all but I am always so incredibly rushed in the morning I forget breakfast nine times out of ten.  I know it’s bad for me but when it’s between the snooze button and a bowl of cereal I’ll always pick those extra ten minutes of sleep.  A little while ago to counter my morning rush I started making things the night before or the weekend before that I could grab as I rush out the door in the mornings.  These muffins I made were great!  Very easy, and really delicious.  When I did it I made a dozen of them.  I know the ingredients list looks daunting but a majority of the ingredients I already had, here’s the recipe:

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1-3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 egg
  • 1/2 cup milk
  • 3 tablespoons vegetable oil
  • 3 tablespoons applesauce
  • 1 medium tart apple, peeled and grated (I chopped mine and it turned out fine, it’s a preference thing)
  • TOPPING:
  • 1/4 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 2 tablespoons cold butter
  • 1/2 cup old-fashioned oats
  • 1/4 cup finely chopped nuts

Directions

  • In a bowl, combine the first six ingredients.
  • In another bowl, combine the egg, milk, oil and applesauce.
  • Stir the wet ingredients into the dry ingredients. Fold in the apple.
  • Fill greased or paper-lined muffin cups two-thirds full.
  • For topping, combine brown sugar and flour. cut in butter until crumbly. Stir in oats and nuts. Sprinkle over muffins..
  • Bake at 400° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Baked Parmesan Garlic Chicken

I’m always looking for new ways to cook chicken, I have a ton of it, it’s super easy and there’s so  much variety in how you can cook it!  I have officially fallen in love with this recipe, so good and super easy!  It was three ingredients, took no prep time, and tasted amazing!  Here’s the recipe:

Baked Parmesan Garlic Chicken:

Ingredients:

1/3 cup grated Parmesan cheese
1/2 package Good Seasons Italian Dressing mix
1/4 teaspoon garlic powder
2 boneless skinless chicken breast halves

Directions:

1. Preheat oven to 400 degrees F.

2. Mix cheese, dressing mix and garlic powder.

  • I tasted it at this point, just put a little on my finger to decide if it needed anything else, mine tasted fine but it depends on the chef!

3. Sprinkle the cheese mixture onto the chicken. Place in shallow baking dish.

4. Bake 20 to 25 min. or until chicken reaches internal temperature of 165 degrees.

Go ahead and give this recipe a try I would really recommend it.  And with your extra dressing mix you can do any number of things, I used mine to flavor my popcorn with, it tasted pretty good!
